Another type of thickening and stabilizing agent, Caragum 200 is a natural and low-cost substitute for locust bean gum. It’s used to add body to sauces and soups while adding no detectable flavor. Caragum 200 is made from a blend of gums that provides viscosity when added to cold water that’s further boosted after heating to 180° F.
